Napa Cabbage & Chicken Chopped Salad

INGREDIENTS
Vinaigrette
2 T sugar
1 T fresh grated ginger
1 garlic clove, minced
1 t salt
2 T rice vinegar
2 T toasted sesame oil
2 T sunflower oil
Salad
2 chicken breasts, cooked, cooled and shredded
3 c chopped napa cabbage
3 c chopped purple napa cabbage
1 c sliced bell pepper
1 can mandarin orange segments
1 c fried wonton strips
3 colorful carrots, cut into matchsticks
3 stalks celery, sliced thin on the bias
4 green onions, sliced into rounds
Preparation
In a small bowl, mash together the sugar, ginger, garlic and salt. Pour in the rice vinegar and whisk until sugar and salt dissolve. Add the remaining ingredients and whisk to combine.
Combine the salad ingredients in a large bowl. Toss with dressing and serve.
