Broccoli Gratin with Breadcrumbs & Gruyere

INGREDIENTS

3 heads broccoli, cut into florets, stems discarded
1/4 c bread crumbs
1 t olive oil
2 T finely grated aged parmesan
1/2 c cream
1/2 t kosher salt
1 garlic clove, minced
1/4 t fresh ground pepper
1 c grated gruyere cheese


Preparation:

Preheat oven to 400. Heat a small skillet over medium high heat. Swirl in the olive oil and add the bread crumbs. Cook, stirring constantly until starting to brown and smell fragrant, 2-3 minutes. Remove from heat and scrape into a small bowl. Toss with parmesan and set aside.

Place broccoli florets in a large bowl.In a small saucepan combine cream, garlic, salt and pepper and bring to a simmer, stirring occasionally. Pour warm cream mixture over broccoli and toss to combine. Dump broccoli into a 9-in casserole dish or cast iron skillet, scraping cream over. Top with shredded gruyere and sprinkle with bread crumb mixture. Bake for 20 minutes until golden and bubbling.
