Charred Green Onion Salsa

INGREDIENTS

6 green onions
2 serrano peppers
6 whole peeled canned san marzano tomatoes
2 canned chipotle peppers
1/2 yellow onion, coarsely chopped
1/2 bunch cilantro, leaves only
juice of one lime
1 t kosher salt

Preparation

Prepare your grill. If using a gas grill, ignite burners and preheat on high for about 5 minutes. If using a charcoal grill, prepare the coals for hot, direct heat grilling. Place the green onions and serranos directly on the grill grates, over the hottest parts of the fire. Cook them, turning once, until charred and black all over, about 10 minutes. Remove from flames and allow to cool for a few minutes.

Meanwhile, place remaining 7 ingredients in a blender. Remove serrano stems and chop roughly. Remove root ends from green onions and chop roughly. Add serranos and green onions to blender and puree until a uniform salsa forms.
