Cilantro

Cilantro (coriander) is an annual herb in the family Apiaceae. The herb is native to regions spanning from southern Europe and North Africa to southwestern Asia. It is a soft plant growing up to 20 inches tall. The leaves are variable in shape, broadly lobed at the base of the plant, and slender and feathery higher on the flowering stems.

Cilantro is hand-bunched in the fields, then sent to the cooler where an ice slurry is injected into the cartons. This serves both to cool the product and to maintain the moisture in this fast-drying herb.
