Curry Chicken Salad on Romaine Spears

INGREDIENTS

2 chicken breasts, roasted and shredded
1/2 c mayonnaise
1/2 c golden raisins, coarsely chopped
4 scallions, thinly sliced, plus more for garnish
1/4 c shelled pistachio meats, chopped, plus more for garnish
2 stalks celery, chopped
Juice of half a lemon
1/2 t kosher salt
3 t curry powder
Dash cayenne (optional)
2 hearts of romaine

Preparation:

First, make the chicken salad by combining first 10 ingredients in a medium bowl and mixing thoroughly. To assemble, trim the ends off romaine hearts. Separate individual romaine leaves, selecting the smaller inner leaves for plating and reserving the others for another use. Lay romaine leaves out on platter, then fill each with prepared chicken salad. Garnish with chopped pistachios and sliced scallions.
