Fava Bean Dip

INGREDIENTS
2 lbs fava beans, shelled, blanched and peeled
1/2 yellow onion, coarsely chopped
2 stalks spring garlic (aka green garlic), white and pale green parts only, chopped
2 T plus 1/4 c olive oil
1/2 can garbanzo beans, drained
juice of one lemon
1/2 t kosher salt
Preparation
Heat a medium skillet over medium heat for 2 minutes. Swirl in 2 T olive oil and add the onion and green garlic. Sautee about 5 minutes until tender but not browned. Add the favas and sautee a few minutes more, stirring frequently. Remove from heat and allow to cool a few minutes. Scoop fava bean mixture into food processor. Add lemon juice and salt and process until a chunky paste forms. Scrape down sides and add garbanzo beans. Process for about 30 seconds until dip starts to come together. Then, with machine running, slowly pour in the remaining 1/4 c olive oil. Dip should become smooth and creamy. If not, add a little more olive oil until desired consistency is reached.
