Napa Cabbage & Radicchio Salad with Peanut Dressing

INGREDIENTS
Spicy Peanut Dressing:
1/3 cup natural salted unsweetened peanut butter
2 garlic cloves
2 tbsp. sriracha
3 tbsp. brown sugar or coconut palm sugar
2 tbsp. soy sauce
2 tbsp. rice wine vinegar
2 tbsp. olive oil
Juice of one lime
1/4 cup water
Salad:
1/2 small head of napa cabbage, thinly sliced
1/2 head of radicchio, thinly sliced
1 large or 2 small carrots, shredded
1/4 bunch cilantro
2 sprigs fresh mint
1/4 cup roasted, salted peanuts, coarsely chopped
Preparation:
Dressing:
Combine all ingredients in blender and purée until smooth.
To assemble salads:
Arrange cabbage and radicchio on platter. Scatter shredded carrot over top. Remove mint leaves and cilantro leaves from stems and thinly slice. Sprinkle over top. Garnish with peanuts and serve with spicy peanut dressing.
