Napa Cabbage Heart Summer Salad

INGREDIENTS
Dressing
1/2 shallot, finely minced
3 T champagne vinegar
1 t kosher salt
1 t dijon mustard
1 t honey
1/3 c heavy cream
Salad
2 napa cabbage hearts, torn into chunks
2 ripe avocados, peeled, pits removed, sliced
1 pint strawberries, hulled and sliced
4 radishes, thinly sliced
1 persian cucumber, thinly sliced
1/2 c pistachos, roughly chopped
Preparation
To make the dressing, combine the shallot, vinegar and salt in a small bowl and allow to sit for 10 minutes. Add the mustard and honey and whisk to combine. Whisk in the heavy cream.
In a medium bowl, toss the napa cabbage, radishes and cucumber together with the dressing. Top with avocado and strawberry and sprinkle with pistachios.
