Purple Napa Cabbage Chopped Salad

INGREDIENTS
Champagne Vinaigrette
1 T minced shallot
Juice of half a lemon
1 t kosher salt
2 t honey
2 t dijon mustard
2 T champagne vinegar
3 T olive oil
Salad
1 small purple napa cabbage (or regular napa cabbage)
1 small head radicchio
1 sweet-tart apple, such as pink lady or honey crisp, sliced
into matchsticks
1 watermelon radish, sliced into matchsticks
Aged parmesan cheese for shaving
Maldon or fleur de sel salt for garnish
Preparation:
Combine shallot and lemon juice in a small bowl and allow to sit for 10 minutes. Whisk salt, honey, mustard and vinegar into macerated shallots. Add olive oil and whisk to incorporate.
Salad Assembly
Quarter the purple napa cabbage and radicchio lengthwise through the core. Discard the tough core, then slice crosswise. Combine with apple and radish, and toss with vinaigrette. Shave generous amounts of parmesan cheese over finished salad and sprinkle with finishing salt.
