Roasted Purple Brussels Sprouts

INGREDIENTS

1 1/2lb brussels sprouts, quartered
2 tbsp olive oil
3/4 tsp kosher salt
pepper to taste

Preparation

Preheat oven to 375. Mix brussels sprouts in a large bowl with olive oil and salt. Toss to combine and spread onto baking sheet, arranging sprouts cut side down. Roast 25 minutes, until brussels sprouts begin to crisp and brown. Remove from oven, place in bowl and enjoy!
