Romaine and Apple Salad with Blue Cheese Dressing

INGREDIENTS

Blue Cheese Dressing (makes about 1 1/4 cups):
1/2 cup mayonnaise
4 oz. blue cheese, coarsely crumbled
2 tsp sherry vinegar
2 tbs sour cream
2 tbs buttermilk
1/2 tsp kosher salt
dash cayenne (optional)

Salad:
2 heads romaine lettuce
2 small apples, cores removed, sliced
1/2 cup candied walnuts, chopped
1/2 bunch chives, coarsely chopped

Preparation:

Dressing:
Combine all ingredients in a small bowl and stir to incorporate.

To assemble salads:
Slice romaine heads from end to end through the middle. Spread a large dollop of dressing on each of 4 plates. Place romaine halves atop dressing, then sprinkle with apples, walnuts and chives over top. Garnish with fresh cracked pepper.
