Sheet Pan Sausage with Napa Cabbage

INGREDIENTS
4 shallots
2 apples, sweet-tart like pink lady
4 bratwurst or sweet italian sausages, uncooked
1 napa heart, quartered
2 T olive oil, divided
1/2 t kosher salt, divided
fresh ground pepper
Preparation:
Preheat oven to 425 degrees. Cut the shallots lengthwise into quarters, leaving ends intact but removing any tough outer skin. Core the apples and cut into 1/2-inch-thick wedges. Place the shallots and apples on a sheet pan, drizzle with 1 tablespoon olive oil, sprinkle with salt and pepper, and toss to coat. Roast the mixture for about 10 minutes, until shallots are just starting to brown at the edges. Remove pan from oven and add the sausages and napa cabbage to sheet pan, dispersing amongst apples and shallots. Drizzle additional tablespoon of olive oil over cabbage and sprinkle with salt and pepper. Return to oven and cook for an additional 20-25 min, until the cabbage is browned and wilted and sausages are cooked through.
