You’ll Love This Valentine’s Day Appetizer

This Broccoli Burrata Crostini recipe blends simple ingredients, sophisticated flavors and tantalizing textures. It’s a delicious new take on a classic Italian antipasto. Easy to prep, fun to share and a healthy start to a memorable Valentine’s Day meal.

What Makes This Recipe So Easy?

From prep to table, this Valentine’s Day appetizer takes about half an hour. Simply slice a baguette, brush with olive oil and garlic, and toast in the oven for 8 minutes. Follow with a quick oven roast of the broccoli florets, and toss with olive oil, garlic, lemon and chili flakes. Finish with a simple crostini assembly of silky burrata and roasted broccoli garnished with pretty pomegranate seeds.

Why Is Broccoli So Healthy?

Broccoli stands tall among healthy vegetables with an impressive nutritious profile. One cup of the cruciferous veggie delivers 2.6 grams of protein and as much vitamin C as an orange. Fresh broccoli is also an excellent source of fiber, beta-carotene, vitamin K, folate and potassium.

Why Is Burrata So Good?

It’s easy to confuse burrata cheese with mozzarella. The Italian cheese starts out as mozzarella, but it’s crafted into a unique delicacy encased in a mozzarella pouch. The process transforms mozzarella into a mixture of fresh cream and soft curds. The buttery result is known as burrata. The silky texture and rich flavor sets burrata apart from its traditional mozzarella origins. Slice open a ball of burrata, and taste the creamy filling that spills out. You’ll know right away why this luxurious cheese pairs so perfectly with roasted broccoli for a tasty Valentine’s Day burrata appetizer.

Ingredients

1 baguette, sliced on the diagonal into 1/2 in thick slices
2 heads of broccoli, cut into florets, stems discarded (about 12 oz florets)
2 tbsp olive oil, divided
1/2 tsp kosher salt
1/4 tsp chili flakes
1/2 tbsp butter
3 cloves garlic, finely minced, plus 1 whole clove
Juice of half lemon
1/4 cup pomegranate seeds
8 oz burrata cheese, strained
Maldon salt

Directions:

  1. Preheat oven to 375 F.

  2. Brush the baguette slices with olive oil and rub with whole garlic clove.

  3. Toast in the oven for about 8 minutes, until bread begins to brown but is still tender.

  4. Set oven to broil on high.

  5. Toss broccoli with 1 tbsp oil, salt and chili flakes then place on baking sheet, making sure florets are evenly spaced and not overlapping.

  6. Broil broccoli on high for 3 minutes, until starting to brown in spots but still al dente. Meanwhile combine butter, lemon juice and minced garlic in a medium bowl.

  7. Remove broccoli from oven and toss to combine with lemon, butter and garlic.

  8. Top each crostini with a spoonful of burrata cheese, then broccoli, and garnish with pomegranate seeds and a sprinkle of maldon salt.
